Table Talk » Hit of the Day: Sweet Orange SalmonOf the dishes that I made today, my favorite was Sweet Orange Salmon. The salmon is rubbed with a mixture of brown sugar, chili powder, orange zest, cumin, paprika, coriander, and black pepper. I let the salmon "marinate" with the rub for 30 minutes before broiling it. The sweet and spicy rub caramelized beautifully under the broiler. I paired the salmon with roasted sesame zucchini and yellow squash.
Sweet Orange Salmon 2 tablespoons brown sugar Adjust oven rack to 5 inches below broiler. Combine brown sugar, chili powder, orange zest, cumin, paprika, coriander, and black pepper in a small bowl. Rub spice mixture over salmon fillets. Place salmon on a broiler pan coated with olive oil spray. Let salmon marinate in the rub for 30 minutes. Preheat broiler. Broil salmon for 8 minutes or until cooked to desired doneness. « A Day in the Life ... | Table Talk Main | Crispy Potato Cakes Revisited » |
