Table Talk » Hit of the Day: Sweet Orange Salmon

Of the dishes that I made today, my favorite was Sweet Orange Salmon. The salmon is rubbed with a mixture of brown sugar, chili powder, orange zest, cumin, paprika, coriander, and black pepper. I let the salmon "marinate" with the rub for 30 minutes before broiling it. The sweet and spicy rub caramelized beautifully under the broiler. I paired the salmon with roasted sesame zucchini and yellow squash.

Sweet Orange Salmon
adapted from Cooking Light
Serves 4

2 tablespoons brown sugar
1 teaspoon chili powder
2 teaspoons grated orange zest
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/4 teaspoon black pepper
4 6-ounce salmon fillets
olive oil spray

Adjust oven rack to 5 inches below broiler.

Combine brown sugar, chili powder, orange zest, cumin, paprika, coriander, and black pepper in a small bowl. Rub spice mixture over salmon fillets. Place salmon on a broiler pan coated with olive oil spray. Let salmon marinate in the rub for 30 minutes.

Preheat broiler. Broil salmon for 8 minutes or until cooked to desired doneness.
